Lemon Rosemary Pasta

Pasta is such an easy go-to meal! In the summer, a dish like this one can transport you to the shores of Tuscany! I used whole wheat pasta for a healthy touch!

1 box favorite pasta (angel hair, corkscrew, penne)
1/2 cup plus 2 tablespoons freshly grated Parmesan cheese
1 tablespoon fresh chopped rosemary
1-1/2 tablespoons olive oil

1 tablespoon butter

1 clove garlic, minced
1 tablespoon chopped fresh chives
1 teaspoon freshly grated lemon peel

1/2 cup cherry tomatoes

1/2 fresh green beans

Salt and freshly ground black pepper

Garnish: chives and lemon wedges (optional)

Directions:

  1. Cook pasta according to package directions, adding the green beans during the last minute of cooking. Drain and return to pan. Add 1/2 cup of the cheese, rosemary, oil,butter, garlic, tomatoes, chives and lemon peel; toss to combine. Season to taste with salt and pepper. Serve immediately with remaining cheese. Garnish with fresh herbs and lemon wedge, if desired.

I like to add some sliced, roasted chicken to my pasta! Enjoy!
