That’s right folks! The Domestic Diva has joined The Doll House and Doll Face Fit! Many ask, how are you cooking and baking all these sumptuous treats, raising a daughter, being a virtuous wife, teaching full-time, being involved in community work, AND STILL stay in shape and work on a DIVA’s body? Well, it’s because of the work put in at The Doll House! Now, it’s not a physical place, but it’s a movement to help women just like you get into shape, learn to eat right (not diet), and perfect workouts that get results that you do in your own home! So stay tuned for some recipes that you can use until you come into The Doll House with us!
Just because we’re eating right, doesn’t mean food has to be boring! C’mon, we’re not rabbits! Try this dish, inspired by satays from India!
Chicken Satay Makeover
¼ cup natural, no salt added peanut butter
1 clove of garlic, chopped
1 teaspoon brown sugar
1 lemon, juiced
¼ teaspoon red pepper flakes
1 tablespoon curry paste
3 tablespoons low-sodium soy sauce
1 tablespoon light coconut milk
¾ cup of water
Vegetables and Chicken:
1 pound boneless/skinless chicken breast, cut into cubes or strips
1 tablespoon peanut oil
2 cups carrots, shredded
1 onion, sliced
1 cup mushrooms, sliced
1 cup broccoli florets
1 cup sugar snap peas
1 red bell pepper, sliced
Prepare the sauce by combining all ingredients into a small saucepan. Start with 1/2 cup of warm water and add more if mixture seems thick. Keep over low heat to stay warm. Season chicken with salt and pepper. Stir fry in oil in a large pan or wok. Stir fry over high heat until meat is completely cooked, and remove from pan. While pan is still hot, add onions and carrots. Stir fry for 2-3 minutes. Add mushrooms, broccoli, snap peas, and bell pepper. Continue to stir fry for 3-4 minutes. Add chicken back into the wok along with the sauce. Heat until mixture for 1-2 minutes or until the chicken is hot. Serve over brown rice or you can enjoy as is!
